Question: Are there bones in your smoked fish?

Response: We clean the fish first, including removing the head, and then filet the fish to remove the backbone. We then remove the fish belly bones. So, in theory, there should not be any bones in the smoked fish you purchased from Ophelia Inlet Products. Of course, rarely, there may be a small bone (or bones) adjacent to the head. These bones, on the rare occurrence they are present, are too small to hurt the person eating the fish.

Question: Do you eat the skin of the smoked fish?

Response: It is recommended to peel away and discard the skin (and any associated fish scales) before eating the smoked fish. The fish meat easily separates from the skin. We leave the skin on the fish to hold the fish together during the smoking process. After the fish is smoked, you don’t need the skin anymore.

Having said all this, we have observed people eating our smoked fish “skin and all…” They enjoy it! However, I personally don’t recommend it, but that is my preference. It won’t hurt you…

Question: Are you shipping product yet?

Response: That is our long-term goal, but Internet Shipping is NOT available yet. You must purchase directly from Ophelia Inlet Products (typically at the Olde Beaufort Farmers Market) on Saturday mornings. If it’s between the middle of December and the middle of April, please contact us and we’ll work something out.

Of course, if you purchase our products from this website, we do offer free shipping from Cedar Island all the way to Beaufort, NC.

Question: What day do you smoke fish?

Response: Our typical day to smoke fish is Thursday, which takes essentially all day. All our smoking of fish is done at Ophelia Inlet Products here in Atlantic, NC, under our HACCP plan. This gives us Friday to weigh the smoked fish and package it. Saturday we are at the Olde Beaufort Farmers’ Market selling the smoked fish.

Question: Do you smoke Salmon?

Response: Yes, we can smoke Salmon exclusively for Salty Catch Seafood Company, 300 Wellons Dr., Beaufort, NC 28516. Please arrange details with Steven or Renee Goodwin at Salty Catch Seafood Company.

Question: Will you smoke a special order?

Response: Yes, for a reasonable special order, we have done that in the past and can do that now! Please just contact us with as much lead time as possible so we can make arrangements to fill your order.
